HIP Granola | Low Sugar Low Calorie

Part of our hip60 program is to give challengers clean and healthy alternatives for some of their favorite things. Every challenge we've been asked about Granola. We've yet to find a clean version that isn't loaded with sugar so we decided to make our own (well actually Christine's mom did - thanks Mom!) We have to say Angela nailed this one with only 3-4 grams for 1/4 cup and 111 calories! We love making a big batch to have on hand, to give as gifts or bring on vacations. It's great with Greek Yogurt, Cottage Cheese or add a little on the top of your smoothie.

5 cups of oats
2 cups chopped almonds
1 cup pumpkin seeds
1/4 chia seeds
2 teaspoons cinnamon
1 teaspoon ginger
1 1/2 cups chopped dried apricots
1/4 cup maple syrup
2 tablespoons olive oil

Preheat oven at 350. Mix together oats, almonds, pumpkin seeds and chia seeds, cinnamon, ginger and salt in a large bowl. Stir it all up. Drizzle maple syrup and olive oil into mixture and stir together (I used my hands for this to make sure everything was evenly coated). Evenly distribute the mixture in two large baking sheets lined with parchment paper.

Bake for 12 minutes. Take out of the oven, stir up the granola and bake for another 12 minutes or less depending how crispy you want it. 5 minutes before you take it out of the oven add in the dried apricots.
